Green Smoothie ‘Green Goo’ and other attempts at breakfast

Several things occurred to me as I was heading home from a Business Meeting  with a Colleague, E, this morning. Firstly, I needed to change Ben. Secondly was that I was having my 5th  of the allotted 2 per week Cheat Days. I had eaten a mixed berry muffin. Smothered in butter. Carb demons – 1, Betty – 0.

E was heading back to work in 6 weeks. We discussed our new morning Peak Time routine. The inclusion of a 2 hour round trip required to get Babycakes to work each day, now that my car is up for sale, was playing havoc with my diet. This morning I had  a green smoothie I call Green Goo on the go. I seem to be the last to catch onto this craze.

Betty’s Quick Breakfast – Green Smoothie aka “Green Goo”

1 cup Low fat yogurt
1/2 cup Frozen Mango
2 handfuls / cups of Kale (destalked )
2 handfuls / cups  of spinach (yes, spinach)
5 fresh mint leaves (chopped )
1 Tablespoon of Ginger
1 Lime (juice only)

1/Place above in a clean blender / food processor and blitz till smooth
2/ Place in a tall smoothie container
3/ Gulp on the go, preferably between morning tasks.

a) 1 friend uses Coconut water as a base instead of Low fat Yogurt
b) Substitute 1 frozen banana and 1 cup frozen blueberries for Frozen Mango
c) add some wheat grass if you dare. known to cause an “earthy” (and I mean soil) flavour.

You’re welcome.

It’s important for me to include the caveat that the above is usually followed by at least 2 doses of rocket-fuel grade coffee sometime later in the morning.

Tuesday night we attended a nutrition night at Bobby‘s Montessori. It was lead by a qualified dietitian. She waxed lyrical about the 5-a-day. Is it alright to swap fruit for veggies? No, it has to be vegetables. Any bright ideas on getting them in? Cue coy smile and referral to contact details for booking Fussy Eater consult. There’s 2 hours of my life I won’t get back.

In light of these and other revolutionary (*rolls eyes) rules to toddler feeding, here are a few things I’ve come across along my travels;

1/ What-has-mommy-hidden-in-sauce Bolognese
2/ Mmm… Meatloaf ( filled with Dinosaur food)
3/ Homemade Apple Juice/Smoothie Surprise
4/ Insert (any)Vegetable-can-be-chips Chips

When all else fails…Bribe.

Recipes of the all the above to follow…

(Ben just woke up… PM Peak Time begins…)
(PS: I was planning on putting up pictures… but again, Ben is up)

Word(s) of the Day

Business Meeting – Coffee with a Colleague once mobile tykes are safely checked into Montessori
Colleague – fellow mothers of previous mentioned tykes, easily identified as sleep deprived zombies commonly without make-up, often covered in bodily fluids and fond of frequently raising their blouses to nourish their young. Usual habits and known habitats to follow.
Ben – second offspring of Betty, baby – gummy smiles, ferocious appetite and King of Cat naps.
Cat naps – sleeps of no more that 2-3 hours post feeding. repeated throughout the day. unlike classic definition enjoyed worldwide by the human race. And cats.
Cheat Days – days devoted to relief from Carb Control / extermination
Peak Time – AM 05:45 till Betty’s first Coffee, PM 16:00 till first hour into asleep phase of offsprings’ bedtimes. Activities including but not limited to making breakfast/ packed lunches or dinner, aiding dressing/brushing of teeth, intermittent breastfeeding, occasionally tidying up and eventual termination in exit of one or more parties to work/school (AM) or bed (PM).
Babycakes – embodiment of all things Husband , breadwinner, father of Betty’s offspring
Green Goo – my green smoothie, detailed above
Bobby – first offspring of Betty, Toddler – mischief maker, prone to tantrums, food refusal and frequents your local potty. Oh, and the best cuddles in town!

I’m Betty, and Butter is a story of a full-time suburban SAHM ( Stay-At-Home-Mom) who practices Medicine in her spare time. My life heavily revolves around Babycakes, my husband, Bobby and Ben, my children and an acerbic tongued pug D’Artagnan.
