About Betty

Hi, I’m Betty, and Butter is a story of  a full-time suburban SAHM ( Stay-At-Home-Mum) who practices Medicine in her spare time. My life heavily revolves around Babycakes, my husband, Bobby and Ben, my children and an acerbic tongued pug D’Artagnan.

I could wax lyrical about how my blog was borne of a desperate need to finally eat after 2 pregnancies fraught with Hyperemesis Gravidarum ( HG) and dietary restrictions of Gestational Diabetes Mellitus. I could also tell you how a meager maternity pay check and my husband’s junior level salary meant we could not afford to feast at fancy restaurants, so I decided to teach myself to cook.

But that would be glossing over the good bits.

My blog is really about my Full-time career in Natural Disaster Management. My daily life in particular. And the ones created by my little boys.

The only things sugar coated are my 3-ingredient Classic Shortbread.

My grandmother was THE original career housewife – baked her own bread daily, made the families pyjamas, sheets and curtains and reared her hens alongside her 8 children.  At 80 and a widow, she is wrinkle free and still very much La Madame of her home.

I’m learning that life isn’t perfect, it comes with a few wine stains. And if you’re perfectly honest, you know there’s a Betty in you too.

Jeni Wellington

Jeni Wellington is a doctor who graduated medical school with great aspirations to specialise in Obstetrics and Gynaecology ( ie pregnancy and Lady parts). However, Life changed when a year in, she found herself juggling the start of a career with a rambunctious toddler. 4 years later, and second toddler in tow, she has changed her specialty 3 times and is still riding the waves of being a full-time Mum who practises Medicine in her “spare time”.

In addition to her babies and her husband, she has a great passion for cooking, especially baking. By no means an extraordinary cook, she considers every meal, the best expression of her love for the people in her life. She created the Betty Butter Blog, as an avenue through which she shares her simplified recipes, a budding interests in food photography and, the general chaos that comes with being a working mom trying to have it all.
